If necessary, add spinach in batches (I added mine in two batches). Cook mixture on low for about 10 minutes, stirring often, until the spinach has fully wilted down, the sauce has reduced in volume a bit, and the gnocchi is cooked and hot.Add the grated mozzarella cheese to the skillet; stir well, to fully incorporate cheese into the sauce and it melts.That’s it! See how easy this is to make? I sprinkled a tiny bit more Mozzarella cheese on top before serving it up into individual bowls, because, you know… cheeeeeese!This was such an easy, delicious dish to prepare! My husband and I really enjoyed it (and we’re looking forward to the leftovers, too)!
